Recipe and Execution:
For the cookie layer:
- 100 gr. almond flour
- 1/8 tsp salt
- 1/8 tsp baking soda
- 2 tbsp. maple syrup or agave syrup
- 1 and a half tbsp. coconut oil
- 1 and a half tbsp. vanilla extract
For the caramel coating:
- 240 gr. pitted dates
- 2 tbsp. coconut oil
- 3 tbsp. almond butter
- 1/8 tsp salt
- 1 tbsp. vanilla extract
For the chocolate coating:
- 250 gr. couverture stevia or classic
1. Start with the cookies layer. Using your hand, mix all the ingredients in a bowl until well combined. Leave in the fridge for 10 minutes.
2. If you want to take the easy way, spread the mixture on a small pan and cut it later. Otherwise, form long narrow sticks with the mixture - the Twix.
3. Put in the freezer for 15 minutes before baking for 15 minutes in a preheated oven at 180 degrees. Remove from the oven, allow to cool completely, then remove from the pan.
4. To make the caramel layer, leave the dates in hot water for 10 minutes to soften. Pour all the ingredients into the blender. Beat well.
5. Spread the caramel mixture over the first layer and refrigerate until you have melted your couverture.
6. Once you've melted your couverture in the bain-marie or microwave, take the Twix out of the freezer. Dip them in the couverture one by one and transfer them with two forks to a tray on which you have first spread non-stick paper.
7. Put them in the fridge. After 15-30 minutes you can enjoy.
8. You can keep homemade Twix in the fridge for a week and in the freezer for up to 2 months.
